Laura at Urban Hennery is proposing to all of us locavores a challenge to keep eating local even in the winter ahead. The challenge is basically to continue to create one meal a week using mostly local ingredients until end of year.
I like this challenge. I can continue to get local eggs and all our winter produce from our CSA (I am so happy with my new vegan cookbook that I plan to bake exclusively vegan this winter if eggs are scarce.) Grains continue to be tough, but the huge Con-Agra Foods is not far, in Nebraska. Still working on that one. Local honey, nut butters, apple butters and jams are easy, as are our now-routine homemade soymilk and bread. Bring it on!
